When winter arrives and the temperatures are low, you have probably already eaten a good raclette. But what is its origin? We present you the story of the raclette .
The origin of the raclette
Some writings, dating from the Middle Ages, refer to a cooked cheese. But the word “raclette” does not appear until 1874 . The raclette was designed by Swiss Shepherds. They cut a piece of cheese and put it over the wood fire to savor it. The way to taste your raclette has of course changed greatly.
Cooking the squeegee on a wood fire will disappear in the 1920s. Indeed, the electric ramp is created. Raclette de Savoie was born in the 1970s with the creation of a raclette machine. Today, Raclette de Savoie wishes to protect its quality and origin by obtaining the Protected Geographical Indications (PGI) label. With more than 50,000 tons per year, France has become the leading manufacturer of squeegees.
It must be known that for a raclette to be so named, it must contain at least 45% fat and have 8 weeks of ripening. During your meal, you can accompany your meal with potatoes and white wine.
